It’s friday! And to me there is no better way to celebrate the weekend than indulging a bit, so today I’ll tell you all about my favourite treat!
This will make 8 muffins.
Melt 75 grams of butter and set aside to cool. In a bowl mix up 2 dl of flour, 1 dl of caster sugar(I also “accidentally” slipped 1 teaspoon of muscavado sugar in there, because honestly who can bake without muscavado sugar?), 1 teaspoon of baking powder, 1 teaspoon of cinnamon, a pinch of cardamom and a pinch of powdered ginger. Now, to the butter add 1 large egg and 1 dl of milk. Stir together and then sift the dry mixture into the wet one. If you like a bit a acidity, then also add a squeeze of lemon at this point.
Spoon the batter into a muffin tray and shove in a 200 degree(celsius!) oven for 12-14 minutes.
Now all you have left to do is eat.
I’ve been told that the metric system confuse some people, just as the imperial makes my head spin. So, 1 dl(1 deciliter = 0.1 liter) is 0.4 cups. Everyone up to speed? Great, then what are you waiting for? Set to baking!
