You may have guessed it already, but I can now confirm the rumours that I’m a soup girl. It’s true, my favourite dish is soup of any kind. preferably a brothy one. Today is a rarity though, because I’ll give you the recipe to a creamy soup instead(OMG!)
You start off with regular curry powder, throw about a teaspoon in a hot pan with some olive oil. Add a pinch of ginger powder and ground coriander. Obviously you could use fresh cilantro if you like, but I like the ground spice better. Tastes less… perfumey. With the spice goes 2 chopped up spring onions, the zest of half a lemon plus the zest of a whole lime and a few stems and leaves of flat leaf parsley, also chopped up. Stir! Pour in half a liter of water, put the lid on and led simmer for 15 minutes. Take the lid off now and add 3 dl(=1.2 cups) of cream, toss in a handful of green beans and let it boil away for 5 minutes, after this add 200 grams of salmon and in just a couple of minutes your delicious soup will be ready!
The hint of spice from the curry really blends well with the smoothness of the cream, so this soup is great on a really cold night, it will warm you right up!
