Carrot-Sweet potato Soup

Here we go again, right? It’s a soup, AGAIN?

We had a bit of a health scare here in my house, so therefore I proclaimed this week to be HEALTH WEEK! I needed to figure out a way to quickly get more vegetables in my diet, and that’s why I created this soup.

Soups are generally a fantastic way to easily get healthy, and this one is no exception.

Now, for the ingredients!
1 large carrot
½ sweet potato
1 tomato
1 shallot
1 pinch of rosemary
1 pinch of thyme
1 pinch of white pepper
1 pinch of curry powder
1 thumb size piece of ginger
1 cube of vegetable stock
1 litre of water

Peel the sweet potato and ginger, then cut up all your ingredients into fairly rough pieces. This soup will be blended at the end, so there is absolutely no need for any fancy chopping. Pew, right?

Sauté your vegetables, in a large pot, on a medium heat for 4-6 minutes, add the rest of the ingredients and set to simmer for 20-30 minutes. Use a blender or a hand mixer to get your soup smooth and creamy. Garnish with a bit a dried chili, aaaand done!morotssoppa
