Do you have some chicken fillets in the house? Do you feel like you don’t have time to cook? Do you feel like something healthy?
Well, in that case… There is absolutely no reason for you not to read this post!
Today I’ll give you two quick, easy and simple ideas of what to do with chicken.
I’m coming out of a period of being sick for 3 weeks straight, so I need to get the health factor back up by getting some much-needed vegetables and vitamins, and quickly!
Cut 1 chicken fillet in half, this to reduce the cooking time, and also it just feels nicer to have 2 pieces of chicken on your plate, rather than one. Right?
Sear the chicken in a pan with some olive oil. And while that’s cooking away, start cutting up your vegetables. I used 1 carrot, ½ avocado, ½ tomato 1/4 red bell pepper, 1/4 green bell pepper and a handful of arugula.
I didn’t use any salad dressing this time, but it work amazing with a mustard vinaigrette.
Serve with some nice toasted bread, and you’ll be set.
All in all this takes about 10 minutes to make.
This is very similar to the previous recipe except that this one has couscous. So while you’re cooking your chicken this time, pour 1 dl of couscous into a bowl and on top of that goes 2 dl of boiling water. Cover your bowl with plastic wrap and set aside till the chicken is 1 minute away from being done. Then you mix your couscous with your pre-cut vegetables and make a beautiful salad.
This also takes around 10 minutes to make.
Nooow, now I’ll talk about the fun part!
When you’re cooking as simply as I’ve done here above, the importance of proper seasoning comes in to play. You have to season your chicken heavily, and not only with salt and pepper, but with herbs and/or garlic, or even maybe some red wine. Anything that will give your chicken that extra umph! to make it super moreish.
For my recipes I used a super secret spice rub.
