Pasta Spinach-Pesto

This dish is one of those things that might look super complicated, but in fact is easy! pastap1

I decided I wanted to have some pasta-pesto for lunch, but I wanted to pack it as full as possible with nutrients. So, pesto is basically basil, pine nuts, parmesan and olive oil, right? Well, what I thought was… What if instead of basil I use spinach? Not that basil is unhealthy in any way, but spinach is fantastic. It’s rich in Vitamin A mainly, but plenty of other fantastic things also.
Anyway, I’m here to tell you, it was gooooood!

Handful of spinach
1 tablespoon of pine nuts
1 tablespoon of olive oil
1 tablespoon of grated parmesan
1 tablespoon of pasta water

4 sun dried tomatoes
1/5 of a leek
Handful of spinach

Start putting on a pot of water to boil and get some pasta in there. How much is really up to you, and how big you prefer your portions to be.
While the pasta is boiling get all your pesto ingredients, except for the water, in a mortar and start bashing away. When you’ve got a nice paste, add a bit of water from your pasta pot and stir that in.
Set aside.

Get a frying pan hot, throw in chopped up tomatoes and leek and let cook for 2-3 minutes.
At this point your pasta should be done, drain it and toss it in the pan. Stir in your pesto, some spinach and salt to taste.
Take from the heat, sprinkle some left over pine nuts and serve!
