Peanut butter cups are dead simple to make, and honestly if you get the right ingredients, this isn’t too bad for you anyway. So guilt free AND chocolate, how amazing is that?
Let me answer, it’s sooooo amazing.
What you’ll need:
75-100 grams of dark chocolate
1-2 tablespoons of peanut butter
1 teaspoon of powdered sugar
10-20 disposable mini muffin cups
In a water bath(bain-marie or double boiler) melt a bit less than half the chocolate.
Now, melting chocolate is sort of an art form. The trick is the take it of the heat when 2/3 of the chocolate has melted. The residual heat will melt the rest if you get a spoon and stir through every 30 seconds or so.
I know some people will skip all these “complicated” steps and just put their chocolate in the microwave. Heathens! I wouldn’t recommend the microwave technique though as it can make your sweet, sweet chocolate grainy. So just use a water bath, it’s quick and easy. Don’t worry!
Using a teaspoon, spoon a tiny bit of a mixture into the mini muffin cups. With the back of the spoon, spread the chocolate all around the edges to get the entire cup chocolate covered. Put on a plate.
Follow this step untill you run out of chocolate, and then get your plate in the fridge and wait for the chocolate to set. This wont take too long, less than 20 minutes. When set, take out.
Melt the rest of your chocolate.
While that melts, mix your peanut butter with the sugar and spoon a little bit of it into each cup.
When the chocolate is melted pour it into your cups, making sure that every single one is completely covered.
Put the plate back in the fridge and again wait for the chocolate to set.
When set, peel the paper cups off and insert finished peanut butter cups in to mouth.
If you’re not a fan of dark chocolate, or simply like your desserts a little sweeter, feel free to use milk chocolate instead.
I filled this one with chocolate mousse. Decadent, I know. But I deserve it!
