Whenever I’m in a grumpy mood, and in desperate need of some comfort food I always run for this meal. It’s easy to make, costs next to nothing, pretty low in calories and full of delicious goodness to help lift the bad mood right off me.
So if you’re like me, look no further than this recipe for a crazy good tomato soup!
For 3 large portions you’ll need:
1 large carrot
2 celery stalks
1 large yellow onion
2 cloves of garlic
1 cube of chicken bullion
1 teaspoon of sweet paprika
1 tablespoon of tomato paste
1/3 teaspoon of finely ground black pepper
1/4 teaspoon of finely ground white pepper
1 pinch of roasted garlic powder
5-6 dl(2 cups) of water
Chop up your vegetables roughly. Don’t bother with cutting it fine, you’ll run this soup through a blender at the end, so just cut small enough for the veg to cook through within like 20 minutes or so.
Get all the vegetables, except for the tomatoes, in a pot on medium heat. Stir every 30 seconds to make sure nothing sticks to the bottom of your pot and leave on for around 5 minutes.
Now add everything else, save the water, on your ingredient list, and let it cook together for another 5 minutes.
Now you can add the water!
Put a lid on a leave for 40-60 minutes on a low simmer.
After a good amount of time, get your blender out and blend the soup until smooth.
How much water your add to the soup depends on how thick you like your soup to be. I like mine of the thin side so I add quite a lot of water, so I would suggest using only a little at first. Remember, you can always add more water after blending if you’re not happy.
